Carousel London, Marylebone’s blossoming restaurant, gallery and events space have collaborated with series of up and coming guest chefs to produce unique and innovative dining experiences. Each residency lasts around two weeks with set menus, varying in size for both lunch and dinner sittings.
Leading into the summer line-up, the current guest chef residency is held by Mexican chef, Oswaldo Oliva. As his social media profile says, he is a dreamer, “seeking…..cooking. Looking at life through the wrong end of the telescope.” His journey from Mexico City to Spain took him into the most iconic restaurants of the world in Spain where he worked with Joan Roca at the now three Michelin starred El Celler de Can Roca in Girona and then for seven years with Andoni Aduriz at the two Michelin starred Mugaritz currently #6 on the 50 Best Restaurants List by Restaurant Magazine.
Speaking to Oswaldo, he explains his menu at Carousel is light and summery, embodying his love for colour and texture. The lunch menu consists of three courses, priced at £16.50 for two courses or £21.50 for three courses. The starter was a sequence of herbs, pickles and dressings stacked on a creamy egg yolk, followed by a stunning main of hake, coasted with a thick creamy pistachio spread and thin slices of Kohl Rhabi. Delicious and delicate with contrasting textures and both rich and fresh flavours. Dessert was Nasturtium pods with pink pepper and thin peach slices. Oswaldo will be at Carousel until the 11th of July so don’t miss out!
